Margarita Cupcakes

In honor of the fast approaching Cinco De Mayo I made Margarita Cupcakes!

Here’s how I did it for 72 mini cupcakes.

Ingredients for the Cupcakes:

1 box lemon cake mix

1/2 cup water

1/2 cup vegetable oil

1/2 cup tequila 

1 teaspoon orange zest

3 eggs

1 box lime jello 


Heat oven to 350. Place paper cups in the muffin tin.

In a large bowl, beat all ingredients until well mixed. Divide evenly among the paper cups.

Bake 15-20 minutes. Cool for 10 minutes; remove from tin and cool completely on a cooling rack.

Ingredients for Frosting:

2 containers of whipped fluffy white frosting

1 teaspoon lime green food color


In a medium bowl, mix frosting and food color until well blended. Frost Cupcakes.

Ingredients for Decorations:

1/4 cup coarse White decorator sugar crystals

Thin lime slices (1 per cupcake)

Steps for Decorating:

Sprinkle sugar on a smal plate. Roll cupcake edges in the sugar.

Cut a small slice in lime slices. Twist and place on Cupcakes using a toothpick.

Store in the refrigerator until ready to serve. I found out the hard way that the lime juice will melt the frosting if you don’t.
